So I typically don’t post recipes, but I am so in love with this one that I HAD to share! It is SUPER easy, and pretty healthy (as long as you don’t mind a few vegetables out of a can). In general, I try to stay away from canned veggies, but sometimes after a long day you just want dinner to be delicious AND easy.
Easy Low-Fat Taco Soup
Ingredients 1 lb extra lean ground turkey breast 2 cans of rotel (I choose one mild, one hot) 1 package taco seasoning mix (I get the spicy one!) 1 package hidden valley ranch dressing mix 1 can black beans 1 can beans (pinto or black) 1 can whole kernel corn
(Now, to make this even healthier you could make your own taco seasoning (less sodium), and pre-cook some fresh beans. If you wanted to make this less healthy, you could use ground beef instead of turkey. It’s very easy to substitute, so add what you like!)
Preparation 1. Brown the meat 2. Mix the taco seasoning and ranch dressing mix into the meat and let simmer a couple of minutes 3. Combine all of the ingredients, without draining the cans, into a large pot (optional: blend up the rotel if you don’t like chunky tomatoes) 4. Simmer for about 1 hour on low heat, stir occasionally 5. Serve hot, topped with sour cream, cheese, avocado, or nacho chips (optional)
